Creamy Zucchini and Feta Risotto
Carnaroli Classico rice is a prized variety, perfect for preparing rich and creamy dishes. This recipe takes advantage of the creaminess of feta and the freshness of courgettes , creating a simple but delicious dish. The courgettes and feta marry perfectly creating a unique flavour, making this risotto ideal for a quick lunch or a light dinner.
Ingredients for four people:
- Classic Carnaroli Rice Classic : 320 g
- Small dark green courgettes: 6/8
- Oil: as much as needed
- Feta: 200g
- Vegetable broth: 1 liter
- Onion: half
Procedure:
- Wash the courgettes very well. Using a knife, remove the green outer part of a courgette and set it aside.
- Then grate the courgettes with a coarse grater and cut the feta into cubes.
- Prepare the broth and bring it to the boil, also adding the removed courgette strips which will then be used as a garnish.
- In a medium saucepan, sauté the half onion, then add the courgettes and cook for two or three minutes over high heat.
- Add the rice and toast it , then add the broth a little at a time.
- after about 18 minutes the risotto is ready, turn off the heat and add about half of the feta to the rice in the pan.
- Mix well and pour into the serving dish.
- Garnish as desired with oil, pepper, feta squares and zucchini strips.
