Creamy Zucchini and Feta Risotto

Carnaroli Classico rice is a prized variety, perfect for preparing rich and creamy dishes. This recipe takes advantage of the creaminess of feta and the freshness of courgettes , creating a simple but delicious dish. The courgettes and feta marry perfectly creating a unique flavour, making this risotto ideal for a quick lunch or a light dinner.


Ingredients for four people:

Procedure:

  1. Wash the courgettes very well. Using a knife, remove the green outer part of a courgette and set it aside.
  2. Then grate the courgettes with a coarse grater and cut the feta into cubes.
  3. Prepare the broth and bring it to the boil, also adding the removed courgette strips which will then be used as a garnish.
  4. In a medium saucepan, sauté the half onion, then add the courgettes and cook for two or three minutes over high heat.
  5. Add the rice and toast it , then add the broth a little at a time.
  6. after about 18 minutes the risotto is ready, turn off the heat and add about half of the feta to the rice in the pan.
  7. Mix well and pour into the serving dish.
  8. Garnish as desired with oil, pepper, feta squares and zucchini strips.
