Ingredients for four people:

  • Classic Carnaroli Rice: 320 g

  • Raw spinach: 2 large handfuls

  • Butter: 40 g

  • Vegetable broth: 1 liter

  • Parmesan: to taste

Procedure

  • Prepare the spinach: Clean and roughly chop two large handfuls of raw spinach.

  • Soften the spinach: In a saucepan, melt the butter (40 g) and add the chopped spinach with half a cup of vegetable broth. Cook until the spinach is well softened.

  • Toast the rice: Add the Carnaroli rice (320 g) to the pan with the spinach, stirring constantly to lightly toast it.

  • Cook with broth and sparkling wine: Gradually add the vegetable broth (about 1 liter) and three glasses of dry sparkling wine, stirring constantly. Cook over medium-high heat, adding more broth or sparkling wine if necessary, until cooked to your desired consistency.

  • Stir the risotto: With the heat off, add the cream and stir the risotto well to make it creamy.

  • Finish with Parmesan: Sprinkle with Parmesan cheese to taste for a final touch of flavor.
