Saffron risotto

Carnaroli Classico rice is a prized variety, perfect for preparing rich and creamy dishes. This recipe highlights the unmistakable flavor of saffron and the delicacy of beef marrow, creating a tasty and traditional first course. Saffron gives a bright color and a unique flavor, making this risotto ideal for a refined lunch or a special dinner.

Ingredients for four people :

  • Classic Carnaroli Rice: 400 g

  • Saffron: 3-4 sachets

  • Beef marrow: 50 g

  • Parmesan: about 100 g

  • Butter: about 50 g

  • Dry white wine: half a glass

  • Meat broth: 1 liter

Procedure :

  1. In a pan, melt the butter and the beef marrow.

  2. Add the rice and toast it well until it is very hot.

  3. Pour half a glass of dry white wine and let it evaporate completely.

  4. Once the wine has evaporated, add all the meat broth. Mix well and let the risotto cook, adding hot broth if necessary.

  5. In a bowl, dissolve the saffron in half a ladle of hot broth and add it to the risotto, stirring well to combine.

  6. Once cooked, add the grated parmesan and mix well.

  7. Serve the risotto hot.
