Rice salad with smoked salmon and capers

Fresh, flavorful, and perfect for summer: this rice salad with Ebony rice, smoked salmon, and capers is a balanced and flavorful dish. Ideal for a light lunch or to take to the beach.


Ingredients for four people

  • Ebony Rice: 320 g (2 measuring caps)

  • Smoked salmon: 200 g

  • Capers: 2 tablespoons

  • Arugula: 100 g

  • Cherry tomatoes: 200 g

  • Extra virgin olive oil: 4-5 tablespoons

  • Lemon juice: 1

  • Salt and pepper: to taste


Procedure

  1. Cook the Ebano rice in plenty of salted water according to the package directions. Drain when al dente and let cool completely.

  2. Cut the smoked salmon into strips or cubes and the cherry tomatoes in half.

  3. In a large bowl, combine the rice, salmon, capers, arugula and cherry tomatoes.

  4. Season with extra virgin olive oil, lemon juice, a pinch of salt and pepper.

  5. Mix well to combine the flavors and let it rest in the refrigerator for at least 30 minutes before serving.
