Ebony Rice: 320 g (2 measuring caps)

Smoked salmon: 200 g

Capers: 2 tablespoons

Arugula: 100 g

Cherry tomatoes: 200 g

Extra virgin olive oil: 4-5 tablespoons

Lemon juice: 1

Salt and pepper: to taste
Procedure

Cook the Ebano rice in plenty of salted water according to the package directions. Drain when al dente and let cool completely.

Cut the smoked salmon into strips or cubes and the cherry tomatoes in half.

In a large bowl, combine the rice, salmon, capers, arugula and cherry tomatoes.

Season with extra virgin olive oil, lemon juice, a pinch of salt and pepper.
