Carnaroli rice : a good risotto must have an excellent consistency. Thanks to its grain, which resists cooking perfectly, a good Carnaroli does not overcook, nor does it risk giving rise to the pimping effect, but rather keeps each grain intact and shelled. Apollo rice : Apollo rice is a very traditional rice, very versatile, used in the kitchen to make many different dishes. Although this rice variety is less famous than the oriental Basmati and Thai, it is part of the same family and is used in the same ways.

Carnaroli rice

Carnaroli rice is a Lungo A type rice. Its grain, large and oval in shape, has an opalescent central pearl, which helps absorb flavors and aromas during cooking thanks to its porous surface.

Rich in amylose and resistant to cooking, it is a perfect rice for the preparation of risottos and which today is among the most used in the kitchen, both by great starred chefs and by families all over the world.

Baldo Unabridged

Baldo rice is a Lungo A type rice, characterized by a very consistent, large and translucent grain. It was born in the seventies from the cross between Arborio rice and the Stirpe 136 variety.

Apollo rice

Apollo rice is an aromatic Lungo A type rice, obtained through non-GMO crossing techniques between an aromatic Asian variety and an Italian rice.

Carnaroli

It is recommended to use it to create first courses, in particular risottos, but also for other traditional recipes, such as supplì or arancini.
