Carnaroli PDO rice in glass jar - 500g
Carnaroli PDO rice is grown in the Baraggia area, a historic region of Piedmont where rice cultivation has been documented since the 1500s and where unique soil and climate conditions give rise to a product of absolute excellence.
Baraggia is currently the only region in Italy to boast a Protected Designation of Origin for rice, safeguarding a rigorous supply chain that guarantees consistent origin, quality, and characteristics over time.
Carnaroli PDO is distinguished by its long grain and compact structure, its excellent cooking resistance, and its high amylose content. During preparation, it releases starch in a balanced way, allowing for creamy, well-bound risottos with a perfect al dente texture. It is a rice that combines agricultural tradition, territory, and production expertise, an authentic expression of Baraggia and a symbol of Italian rice excellence worldwide.
Characteristics
Carnaroli rice is perfect, especially if you want to prepare a risotto. Let's look at the main reasons:
Perfect cooking resistance: a good risotto must have excellent consistency. Thanks to its grain, which perfectly resists cooking, good Carnaroli rice does not overcook or risk creating a mushy effect; instead, it keeps each grain intact and separate. For a pleasant mouthfeel.
Rich in starch: among the polysaccharides that make up starch is amylose, and Carnaroli is rich in it. This substance contributes to the consistency of the grain, but at the same time, more starch is released during cooking compared to other rice varieties. The result is the classic creamy texture, a fundamental factor for an impeccable risotto.

Information
Carnaroli rice is a long-grain A type of rice. Its large, oval-shaped grain has an opalescent central pearl, which helps to absorb flavors and aromas during cooking thanks to its porous surface.
Rich in amylose and resistant to cooking, it is a perfect rice for preparing risottos and is currently one of the most widely used in cooking, both by renowned Michelin-starred chefs and by families around the world.
